gluten free pancakes

Almond meal is the perfect flour replacement for those on gluten free, sugar free, low GI and low carb diets and give a light moorish texture that is to die for.
Serves 2
100 g almond meal(almond flour)
1/4 tsp bi carb soda (baking soda)
1 tablespoon linseeds (flaxseeds)
1 tablespoon arrowroot
2 free range/ organic eggs
60 ml milk (dairy, rice, almond)
Combine all the ingredients in a bowl and allow to sit for 5 minutes.
Heat a pan with a little macadamia nut oil or olive oil, then place two spoonfuls for each pancake.
Cook 2 at a time on both sides until golden. Serve immediately.
Serving ideas:
Top with strawberries, bio yoghurt and a little honey
Top with caramelized apple wedges in a little organic maple syrup
Top with sliced eco banana chunks and a drizzle of honey
Top with blueberries and drizzle over a little honey

I’m starting the HCG Diet on monday and i was planning on eating the special K foods but some of the things on hcg seem like they wouldn’t work with SK, like the absence of sugar for hcg and obviously SK has some. I’ve done SK for a short while before and it worked before but I quit because I got really busy. But would it be ok?

What does arrowroot do in recipes? Is it needed? Is there a substitute? Is it like baking powder?

Sandra, arrowroot will thicken your sauce slightly. So will reducing the stock a tad…it’s up to you on how saucey you like it.
