Bircher Muesli – gluten free

Sometimes if I’m in a rush and want nourishment in the morning I make this really easy gluten free style muesli and serve it with low fat natural yoghurt and some fresh seasonal fruit. You can prepare the night before and let the nuts and seeds soak a little with the yoghurt or eat straight away.  I like to make a big batch and store in a glass covered jar in the fridge for maximum freshness.  This muesi is great if you have any digestive issues – try serving with chunks of papaya which helps aid digestion.

Serves 1

Time it takes: 3 minutes

1 large apple, grated with skin
1 tablespoon sunflower seeds
1 tablespoon almonds, flaked or chopped
1 tablespoon walnuts
1 teaspoon ground linseed (flaxseed)
1 tablespoon goji berries
pinch of cinnamon
200 g  natural bio yoghurt to serve

Combine apple, seeds, almonds, walnuts, berries, cinnamon + yoghurt.
Mix through and spoon into a serving bowl.
Enjoy.

Notes: Top with extra fresh fruits such as berries, banana and papaya.  Drizzle with a little honey if desired.

    Fantastic recipe, Teresa! I made it with pecans instead of walnuts and added some dates as well and it’s delicious. I think I’ve found my new breakfast!
