Tabouli

A terrific portable recipe to take to the office. It’s a staple in my home and I regularly swap protein sources from wild salmon, tuna, sardines to mackerel. Adding plenty of fresh lemon and  garden herbs is the trick to making this a ripper salad and the seeds add crunch and extra nourishment.

what it’s good for:

This tabouli is full of vitamins and minerals such as B vitamins, E, magnesium, iron and fibre. The pumpkin seeds are high in zinc which is good to nourish your immune system. Fish such as tuna, sardines, salmon or mackerel is high in omega 3 which supports healthy cardiovascular and brain function. Sea vegetables such as wakaeme or nori are high in the mineral iodine, which is required for the healthy functioning of the thyroid essential to maintaining metabolism.

Serves 1

Time it takes: 5 minutes

2 tomatos, chopped
2 spring onion finely sliced
100g  tin, fish in spring water (tuna, sardines, wild salmon, mackerel )
1 lebanese cucumber, chopped
4 tablespoons, chopped parsley
4 tablespoons, chopped mint
1 tablespoons pumpkin seeds
juice and zest from 1/2 – 1  lemon
1 tablespoon cold pressed olive oil
5 g wakaeme or nori seaweed, chopped (optional)
black pepper

Combine the tomato, spring onion, fish, cucumber, parsley, mint, pumpkin seeds, lemon juice, wakaeme and oil. Mix through well and season with plenty black pepper to taste.

    Can you get wild salmon in Sydney- apart from canned? IF so where?

    • Hi Eva, the canned wild salmon I normally get is the Paramount brand – however sardines are fantastic in this tabouli and all are wild caught. Any fresh wild fish will be lovely in this tabouli as will green lentils and chickpeas. You can get fresh wild salmon here, caught off the coast of Australia, however it’s not the same Atlantic salmon you are used to…The one I normally get is a King Salmon from New Zealand from my fish monger.
