HEALTHY OLIVE OIL ANZAC BISCUIT RECIPE

What's great about it

This is a delicious and healthy olive oil anzac biscuit recipe from my new cookbook, Simple Healthy Recipes. This delicious recipe is high in fibre and heart healthy monounsaturated fats from extra virgin olive oil. Pure natural goodness you can taste and your body will thank you for it. Enjoy.

Ingredients

175g (6oz) rolled oats

150g (5oz) desiccated coconut

150g (5 oz) wholemeal spelt flour

1/2 teaspoon bicarb soda

125 ml (1/2 cup) extra virgin olive oil

125 ml (1/2 cup) maple syrup

60 ml (1/4 cup) hot water

 

Method

PREHEAT your oven to 160°C (320°F) fan forced.

COMBINE oats, coconut, spelt flour and bicarb soda into a mixing bowl.

POUR IN the olive oil, maple syrup and hot water, then mix well.

DIVIDE the biscuits onto baking trays, lined with baking paper. You should get about 18 in total.

FLATTEN down the biscuits slightly with your fingertips.

BAKE for 20 minutes until golden, then remove and cool.

ENJOY dipped into icy cold milk or with your next coffee.

 

Notes and Inspiration

Using wholemeal spelt flour and oats in this recipe adds fibre and gives the biscuits a wonderful flavour. Spelt also has a lower gluten content so it’s kinder to the digestive system.
