When I was little, my Great Aunt used to make this amazing Polish chicken soup called Rosół to help fight my cold or flu. I remember having pneumonia several times when I was growing up and my immune system was very weak. My Aunty used to infused the soup with loads of garlic and freshly chopped garden herbs and her soup was extremely delicious. I could instantly feel it’s healing effects with every mouthful and enjoying this soup made me feel better straight away.

Re-claim breakfast and your health. Take the 7@7 challenge and have a green smoothie with 7 fruit + veg for 7 days. Our busy lifestyles mean that breakfast is increasingly rushed. According to the Vitamix 7@7 Breakfast Research 2013, almost 1 in 2 Australians get two or less serves of fruits and vegetables every day. The answer? Re-claim breakfast, and our health, with the Vitamix 7@7 Go-for-Green Breakfast Challenge: at 7am every day, have a green smoothie with at least... Read More

There is nothing better than a warm bowl of nourishing porridge to start the day. I love this recipe, it’s simplicity and a delicious taste reminicent of apple strudel. What’s great about it is that it takes just a few minutes to cook up and if you’re a mover and shaker, you can easily combine all the ingredients into a bowl the night before and allow the oats and seeds to soften and absorb the milk and aromatics. Use whatever milk you prefer – but the... Read More

This time of year I start craving hot chocolate. Something warm, sweet and nourishing that’s healthy and not going to start turning me into a marshmallow during winter. I thought I’d share a new hot chocolate recipe I developed for myself so that I could warm and nourish my body in front of a good DVD or episode of Revenge. I love the change of season. Its revitalizing seeing the weather patterns shift and trees change colour, little signs to let us know that a new cycle is ready to begin. What most excites me though, is the availability of a whole new batch of beautiful seasonal produce. Time to experiment with different foods and flavours or rehash old favourite recipes that were enjoyed this time last year.
Synchronising your diet with the seasons is certainly not a new concept. It was a necessity... Read More

I remember mum cooking bubble + squeak for all of us when we were kids. It was basically all the leftover veggies from the night before cooked up in a hot cast iron pan until lovely and golden with lots of crispy bits that tasted amazing. Well I love to follow a little family tradition and often make bubble + squeak at home when I want some warm and healthy comfort food. Macadamia nut milk is a purely delicious creamy milk that requires no straining and takes about 30 seconds to make. It’s a staple in the healthy chef househould and I love making mine scented with vanilla bean and a touch of cinnamon. Soak for easier blending and more bio-availability, which is great for sensitive digestive systems. Use as you would regular milk such as in your next power porridge, smoothie, custard or hot chocolate.

My favourite fruit this time of year is the fuji apple. What I love about them is that they are wonderfully sweet and juicy to eat so they are the perfect ingredient to make my purely delicious apple + cinnamon bread. This is my all time favourite porridge that I enjoy most mornings when the weather is a little cold outside. It’s made from vanilla, flaxseed, chia, fresh apple and a good dose of cinnamon that makes this morning ritual taste exactly like apple strudel. Adding a little cinnamon has the power to help your body metabolize sugar and reduce insulin levels, eating as little as 1/2 - 1 teaspoon of cinnamon a day is all you need to feel the benefits. Protein is considered by many to be the most important macronutrient for humans because of the numerous roles protein plays in the body. Whenever the body is growing, repairing or replacing tissue, proteins are involved. They are found in your skin, bones, muscle and all your organ tissue. In addition, they are used to produce hormones, enzymes and haemoglobin that carries oxygen in the blood. The main function of protein is to build and repair, as well as sustain muscle. Good... Now is the perfect time for making these delicious hot cross buns made from wholemeal spelt, oats, muscatel, honey, cinnamon and vanilla. This is not the light fluff style of hot cross bun you may be used to in the supermarkets made from white flour and refined sugar. Our lifestyle can be pretty hectic these days and the oft-delivered excuse for people not cooking or eating right is a lack of time. Well, that won’t wash anymore. I remember making my first pancake when I was 10 years old. It was a Richard Simmons recipe from his TV show at the time and was made from rolled oats, egg whites, milk and vanilla. Each week I receive a lot of emails asking for different ways to incorporate protein supplements into a healthy diet. A quality protein drink made from natural ingredients can replace a meal or snack. It helps curb sweet cravings and can help support the body’s metabolism.
Not all protein shakes are created equal. Become a label reader and look for powders that are natural and not artificially sweetened or full of fillers. ” See PDF “

There is nothing more satisfying than baking your own cakes, puddings and biscuits for Christmas. Around this time of year I’m in my kitchen a little bit more than usual baking cakes and cookies and packaging them up as presents for friends and family. This is an extremely delicious and simple Christmas cake to make. It’s a part of my great Aunty’s recipe file along with other yummy healthy treats.
This is a dense and moist fruit cake with a high ratio of fruit,... Read More

When I’m pushed for time and need to create a meal that’s quick, healthy + purely delicious, I make zucchini fritters. What I love about these is that they not only taste great but they marry with so many of my favourite ingredients such as Persian feta, baby spinach, lemon + avocado. Enjoy them hot or cold - perfect for breakfast, picnics or take to work lunch boxes.
I love using zucchini when making healthy gluten free breads or lightly roasted ribbons layered... Read More

There is nothing more delicious and more rewarding than making your own crunchy granola. Here’s an adaption from my crunchy muesli recipe from my 80/20 diet book. I often make up a few batches over a weekend to enjoy with fresh berries and lush natural yoghurt or over my Acai smoothie bowl. What I love about this recipe is that it is really easy to make plus it has no added oils in the cooking process like many store bought versions.
The secret to making it lies... Read More

The oft-delivered excuse for people not cooking is that they don’t have the time, but the best recipes are often the easiest to make. Try my simple recipe for scrambled eggs featured in my new 101 ways to lose weight book. It will take you about 1 minute to make and is perfect with a side of fresh tomato and avocado drizzled with a little lime and chopped garden herbs.
What’s good about it:
Eggs are high in protein and contain all the essential amino acids... Read More

I’ve been in a baking mood for the last week and thought I’d share another one of my favourites from my NEW 80/20 ebook. These high protein blueberry muffins are practically a meal in itself and are lovely for breakfast on the run served with your favourite cup of tea or long black. Enjoy !
What’s good about it:

The secret to eating healthy is to keep it real, keep it simple and keep it fresh. The most important rule is to do a little strategic planning, having a rough idea on what you’ll be cooking up in the week ahead, you’ll be more likely to stick to eating at home and fuelling your body with the right ingredients it needs to shed a little bit of that pudding off your belly.
I love making this strawberry crumble, it takes just a few minutes to create and can be served cold... Read More

I was lucky enough to be given this Dhal recipe to share from Kamalaya in Koh Samui. They serve it as part of a detox breakfast or as a hearty evening meal and it’s a favorite among guests. Mung beans belong to the legume family along with lentils, peas, beans, lupins, carob, soy, mesquite, chickpeas and peanuts. You can get them fresh from most grocers or supermarkets in their sprouted form and you can also buy them dry which makes them great for soups and stews.

Here is a delicious gluten free bread recipe. What I love about it is that it’s really easy to make. Most pumpkin breads use smashed cooked pumpkin, but I decided to have a go at using grated raw pumpkin to save a little time. This creates a lovely texture that’s moist on the inside which makes it wonderful to eat with both savory and sweet toppings. I love mine topped with macadamia nut butter and a little honey or as a side to a vegetable based soup topped... Read More

When I design my recipes, I always try to cater for people who have intolerances to foods. I first discovered how to make these delicious dairy free milks when I first visited Kamalaya my favorite wellness retreat in Koh Samui. Today I enjoyed a wonderful bircher museli for breakfast made with raw seeds, nuts, fruits and topped with a delicious almond milk.
Nut and seed milks are a delicious lactose free alternative to traditional dairy. They can be incorporated into... Read More

I’m here for a few weeks, so I’ll be posting some favorites from the Kamalaya kitchen. If you want super power packed nutrition – then you need to try my chocolate smoothie. This makes a delicious healthy snack or light meal that’s perfect when you want to indulge in a little chocolate therapy. The addition of frozen chopped banana makes it smooth and creamy and I sometimes throw in other fruits that compliment and add extra nutrition such as frozen blueberries.

These little cookies make a portable healthy breakfast or snack that go perfectly with your morning tea or coffee. I’ve combined my apple + cinnamon porridge recipe that contains rolled oats, hazelnut, vanilla + muscatel with a little apple and heart healthy macadamia nut oil to make these delicious cookies. You can pump up the protein by replacing the raisins with omega 3 rich walnuts and make them gluten free by using rolled quinoa in place of the oats. I often... Read More
