Roasted Carrot With Almond Dukkah + Labne

I absolutely LOVE this salad !  It’s a staple in my home and it’s delicious warm straight out of the oven or cold the next day for a delicious healthy lunch. Roasting brings out the natural flavours of the carrot and the dukkah intensifies the deliciousness. Simple to make and delicious to eat.  Enjoy. What’s great about it: Carrots contain vitamin A precursors called carotenoids (Beta carotene) that help promote vision and support a healthy immune system.  Almonds... Read More

Super C Immune Boosting Smoothie

Here’s a delicious and simple immune boosting smoothie that I’ve been making at home over the last few weeks.  I find it helps revitalise my body when I’m a little stressed and run down with work and it’s a smoothie I can easily make ahead of time and pop it in the fridge when I get to work. I’ve used oranges in this recipe  - you can also use pineapple and it works really well. I’m a huge a fan of ginger and turmeric – the best natural... Read More

Roasted Baby Carrot with Pomegranate, Pistachio + Hummus

I love my vegetables, and not a day goes by where I’m not inspired to create purely delicious meals to nourish my body and make me feel great. I couldn’t resist posting my favourite recipe of the moment made from simple roasted  baby carrots served on a bed of fresh made hummus and scented with a hint of pomegranate.  You’ll notice that I don’t add  the traditional garlic or cumin to my hummus recipe – the reason is that I find it really over... Read More

Raw Carrot Cake

My purely delicious raw carrot cake is inspired by my healthy Christmas Pudding recipe that I regularly make at home. It’s so simple to make and takes just 10 minutes to mix up.  The end result is a wonderful dense, moist cake that’s full of complexity and flavour. I often just serve it plain and simple, garnishing my cake tin with whole slices of sun dried pineapple.  It’s also delicious topped with thick natural yoghurt and garnished with walnuts and a little... Read More

Roasted Pumpkin + Carrot Soup with Green Goddess Pesto

Over the next few months I’ll be posting some of my favourite winter warming recipes to nourish and heal over the cooler months. A soup that I regularly make is my roasted pumpkin and carrot soup. The roasting intensifies the delicious flavour, allowing a delicate sweetness that comes through the finished dish. I vary how I serve my soup depending on what I feel like at the time or what I have in the fridge.  One of my favourite toppings is a green goddess pesto made from... Read More

Vegetable Stock

The secret to a making a good soup comes down to using a good stock. I love making my own vegetable stocks at home as they are much healthier than store bought versions that are normally reconsituted powders loaded with salt, MSG, flavours and dextrines.  Making your own stock is also a great way of using up left fresh vegetables you may have lying around in the fridge.  My basic stock recipe consists of onion, carrot, celery, mushroom, peppercorn, garlic and herbs such as parsley... Read More

Mung Bean Dhal

I was lucky enough to be given this Dhal recipe to share from Kamalaya in Koh Samui.  They serve it as part of a detox breakfast or as a hearty evening meal and it’s a favorite among guests. Mung beans belong to the legume family along with lentils, peas, beans, lupins, carob, soy, mesquite, chickpeas and peanuts. You can get them fresh from most grocers or supermarkets in their sprouted form and you can also buy them dry which makes them great for soups and stews. What’s... Read More

Vegetable Spaghetti

I love making vegetable spaghetti for dishes such as Meatballs, Bolognese, Pad Thai or Laksa.  This technique was taught to me when I first started my chef’s apprenticeship in a French influenced fine dining restaurant headed up by executive chef Neil Jackson. A great alternative to traditional pastas and they have the added benefit if being nutrient dense as well as being gluten free. There are no nasties, just the good vegetables and a healthy dose of fibre, vitamins... Read More
