The secret to a making a good soup comes down to using a good stock. I love making my own vegetable stocks at home as they are much healthier than store bought versions that are normally reconsituted powders loaded with salt, MSG, flavours and dextrines. Making your own stock is also a great way of using up left fresh vegetables you may have lying around in the fridge. I was lucky enough to be given this Dhal recipe to share from Kamalaya in Koh Samui. They serve it as part of a detox breakfast or as a hearty evening meal and it’s a favorite among guests. Mung beans belong to the legume family along with lentils, peas, beans, lupins, carob, soy, mesquite, chickpeas and peanuts. You can get them fresh from most grocers or supermarkets in their sprouted form and you can also buy them dry which makes them great for soups and stews.

I love making vegetable spaghetti for dishes such as Meatballs, Bolognese, Pad Thai or Laksa. This technique was taught to me when I first started my chef’s apprenticeship in a French influenced fine dining restaurant headed up by executive chef Neil Jackson.
