I love the change of season. Its revitalizing seeing the weather patterns shift and trees change colour, little signs to let us know that a new cycle is ready to begin. What most excites me though, is the availability of a whole new batch of beautiful seasonal produce. I remember mum cooking bubble + squeak for all of us when we were kids. I remember making bucket loads of béchamel (white sauce) when I was working as a chef for a variety of dishes such as lasagne, vegetable bakes, fish pie, moussaka, cheese sauces and soufflé. Macadamia nut milk is a purely delicious creamy milk that requires no straining and takes about 30 seconds to make. It’s a staple in the healthy chef househould and I love making mine scented with vanilla bean and a touch of cinnamon. Soak for easier blending and more bio-availability, which is great for sensitive digestive systems. The secret to a making a good soup comes down to using a good stock. I love making my own vegetable stocks at home as they are much healthier than store bought versions that are normally reconsituted powders loaded with salt, MSG, flavours and dextrines. The pastry chef in me has come out to play and I’ve created my purely delicious chocolate raspberry muffins just in time for Easter. What I love about making these muffins is that they are a one bowl muffin mix that takes about 5 minutes to combine, then all I need to do is to pop them into the oven to complete the magic. This soup was inspired by Kamalaya Wellness Sanctuary in Koh Samui Thailand. The soup is from my 80/20 book and it’s a potent blend of alkalinising vegetables and herbs to promote good health. This is quite a simple and addictive salad. Once you start eating it – you can’t stop because it’s so delicious. I love making it for my dinner and serve any leftovers for lunch the next day. I pump up the protein by adding boosters such as Persian feta, chickpeas or roasted walnuts if i’m eating it cold or for warmer options I serve with my fish in a bag or some quality grass fed beef.

One of my favourite meals when growing up was apricot chicken. Mum used to make it by simmering lean chicken thighs with tinned apricot nectar and a packet of french onion soup. Roasted chicken was always part of my Christmas meal when I was growing up. I try to continue the family tradition with this simple farm style meal that my great Aunt used to prepare every year. When I cook I try to make fresh fruit and veg the main component of each meal and to celebrate Christmas there is nothing I love more then making healthier desserts, puddings and cakes that everyone can enjoy. When I was working as a pastry chef, making gingerbread was part of our weekly production schedule. We used to make the most amazing gingerbread houses glued together with chocolate or royal icing. They were so big that you could almost walk through one of the doors and sit down inside them. The cookie dough was pretty durable so it could hold up for about 4 weeks before the walls started caving in and it was made from a base of white flour, butter, eggs. spices and sugar.

I always try and enjoy one big salad every day. I love making my strawberry breakfast trifle for a quick + healthy breakfast. It takes just a few minutes to whip up and will keep me going all morning. Here’s a terrific no fuss recipe to take to work….or anywhere for that matter. My version of Tabouli takes around 5 minutes to whip up in the kitchen and it keeps really well in a lunch box until you are ready to enjoy. Any leftovers can be devoured as a side to pan roasted barramundi or king salmon then drizzled with extra lime or lemon.
