I love the change of season. Its revitalizing seeing the weather patterns shift and trees change colour, little signs to let us know that a new cycle is ready to begin. What most excites me though, is the availability of a whole new batch of beautiful seasonal produce. Time to experiment with different foods and flavours or rehash old favourite recipes that were enjoyed this time last year.
Synchronising your diet with the seasons is certainly not a new concept. It was a necessity... Read More

Over the next few months I’ll be posting some of my favourite winter warming recipes to nourish and heal over the cooler months. A soup that I regularly make is my roasted pumpkin and carrot soup. The roasting intensifies the delicious flavour, allowing a delicate sweetness that comes through the finished dish. I vary how I serve my soup depending on what I feel like at the time or what I have in the fridge. One of my favourite toppings is a green goddess pesto made from... Read More

I remember making bucket loads of béchamel (white sauce) when I was working as a chef for a variety of dishes such as lasagne, vegetable bakes, fish pie, moussaka, cheese sauces and soufflé. Typically the sauce was made by making a white roux (equal quantities of butter + flour gently cooked in a pot to a sandy texture) then pouring in hot milk whilst stirring to achieve a wonderful silky smooth white sauce. The milk was often scented with aromatics such onion, clove and... Read More

Macadamia nut milk is a purely delicious creamy milk that requires no straining and takes about 30 seconds to make. It’s a staple in the healthy chef househould and I love making mine scented with vanilla bean and a touch of cinnamon. Soak for easier blending and more bio-availability, which is great for sensitive digestive systems. Use as you would regular milk such as in your next power porridge, smoothie, custard or hot chocolate.
What’s great about it:

Anzac biscuits are a favourite of mine to bake in my kitchen and they are traditionally made with rolled oats, butter, sugar, golden syrup, white flour and coconut. Today I thought I’d post a favourite smoothie recipe of mine that I’ll be mixing up on the Healthy Eating Stage. My favourite fruit this time of year is the fuji apple. Protein is considered by many to be the most important macronutrient for humans because of the numerous roles protein plays in the body. Whenever the body is growing, repairing or replacing tissue, proteins are involved. They are found in your skin, bones, muscle and all your organ tissue. In addition, they are used to produce hormones, enzymes and haemoglobin that carries oxygen in the blood. The main function of protein is to build and repair, as well as sustain muscle. Good... The secret to a making a good soup comes down to using a good stock. This soup was inspired by Kamalaya Wellness Sanctuary in Koh Samui Thailand. The soup is from my 80/20 book and it’s a potent blend of alkalinising vegetables and herbs to promote good health. Rich in antioxidants, vitamins C, E and beta-carotene, folate and fibre necessary for a healthy body and immune system. Two of the most important lessons I was taught as a chef was to always taste my food and season with salt before I served it. A pinch of salt in cooking can enhance the flavour of your food and in small quantities, it’s essential for health. Sodium facilitates the movement of muscles (one of the main reasons it comes out in sweat), balancing body fluids and transmitting information to the nervous system; however like most things, if we add too much, it’s not good for... There is nothing better than my buckwheat porridge scented with vanilla bean, red apple and cinnamon which makes it taste just like apple strudel. My first experience with the Palaeolithic Diet or what’s also known as the primal or Paleo Diet was about 20 years ago when I started competing in fitness figure competitions. I was working as a chef at the time and needed to lean up and get down to about 16% body fat in order for me to compete for my first competition.
My trainer told me to cut out all processed foods (basically anything in a can, jar or packet) as well as grains, which included foods such as bread, pasta,... Read More

“I’ve designed my range of Organic Pea Protein & Pure Native WPI to be the purest form of protein supplement available on the market.
Everything I tried was full of junk and cheap fillers that caused bloating and weight gain, the total opposite of what I wanted, so I was compelled to create a protein supplement that really was good for me and provided the perfect nutritional support I needed”.

Over the past month, I’ve been a little obsessed with black beans, so I’ve decided to make my purely delicious black bean and sweet corn salad as part of our Christmas feast. What I love about this salad is that it basically makes a complete meal on it’s own, so perfect if you have any vegetarians in the family. I also love the fact that this salad holds well and can be made into healthy nachos just by heating up with some crushed tomato and a little cumin... Read More

OK, here they are ! my purely delicious fruit mince pie recipe. I’ve tried to cover most bases such as gluten, wheat and dairy free which is why I’ve given you a few pastry options. My favourite pastry to make these lovely pies is the oatmeal shortcrust. It has a lovely crunch and wholesome sense of purity which I love. They last for days (up to 1 week) and they are perfect to complement your nutritious Christmas feast. The oats are low GI and provide... Read More

When I cook I try to make fresh fruit and veg the main component of each meal and to celebrate Christmas there is nothing I love more then making healthier desserts, puddings and cakes that everyone can enjoy. I love making my lush berry crumble as the finale to a meal. It takes minutes to prepare and it can be served warm or cold with proper custard, thick natural yoghurt, or a light drizzle of coconut cream.
I like to vary my crumble topping to vary the final flavour and... Read More

You asked for it – so here it is. My recipe for no-bake chocolate cupcakes made with nutrient dense walnuts and cacao. What I love about these is that they are quick and easy to make and they are perfect for entertaining. I make up a large platter to take to parties and gatherings with family and friends. They are instantly devoured and satisfy the sweet chocolatey fix you sometimes crave. Another great thing about these is that they keep really well in the fridge... Read More

Over the last few weeks I’ve been creating some delicious green meals and juices that help nourish the body and just make you feel great ! My green burgers take about 5 minutes to mix up and they are perfect hot out of the oven or cold as part of your lunch time salad. Hubby loves to eat them with a side of cinnamon roasted sweet potato, smashed avocado and a generous drizzle of lime – I throw them into my garden salad made with lots of leafy greens, avocado... I love my sweet potatoes, especially oven roasted with generous amounts of cinnamon and a little sea salt. You don’t need to do too much to prepare them – they practically make themselves and the final result is truly delicious !
What’s good about them:
Sweet potatoes are a healthy low GI carb source that’s high in beta-carotene the precursor to vitamin A important for eye health. It’s also rich in potassium which is necessary for muscle contraction, nerve transmission,... Read More

I love making my strawberry breakfast trifle for a quick + healthy breakfast. It takes just a few minutes to whip up and will keep me going all morning. I also like to use a nut + seed based trail mix in place of the granola or even something simple like cinnamon dusted walnuts to give my breakfast a little crunch and a boost of omega 3.
What’s Good About it:
Strawberries are low in calories and high in antioxidants. Around 1 cup provides 46 calories, 11 g of carbs,... Read More

There is nothing more delicious and more rewarding than making your own crunchy granola. Here’s an adaption from my crunchy muesli recipe from my 80/20 diet book. I often make up a few batches over a weekend to enjoy with fresh berries and lush natural yoghurt or over my Acai smoothie bowl. What I love about this recipe is that it is really easy to make plus it has no added oils in the cooking process like many store bought versions.
The secret to making it lies... Read More

Here’s a page from my new book called 101 ways to lose weight. It’s my healthy chef shopping list with some great info on how to read food labels and what to look for in the supermarket. My list is intended as a guide and based on my favourite healthy foods I love to eat.
Buy seasonal, locally grown fruit and vegetables, as they are nutritionally better for your health and also less expensive. Shop at farmers’ markets, join a fresh food co-op or grow your own.
