Chocolate Chip Cookie Dough

There is nothing quite like baking chocolate choc chip cookies! The seductive aromas of vanilla and chocolate fills the home, and excited family members can’t wait to take that first bite. This recipe makes the perfect Christmas gift. A one bowl cookie mix that takes minutes to make and the end result is 12 delicious cookies made with love…! I love the idea of sharing good health, encouraging friends and family into the kitchen and enjoying the finished recipe together with a cup of tea or a healthy cinnamon dusted eggnog.

What’s great about it

Oats are a great source of soluble fibre that will keep you regular, they are low in cholesterol and fill you up for hours. Cocoa from dark chocolate is rich in magnesium, iron, copper, manganese and riboflavin, essential micronutrients for health and vitality. The high flavonoid content of cocoa has been scientifically linked to a reduced risk of heart disease, stroke and diabetes. Cocoa also contains theobromine that boost endorphins and increases mental alertness. Whole meal spelt has a higher amino acid profile then regular wheat flours, it’s also high in fibre with and low GI for sustained energy.

ingredients (Makes 1 jar / 12 cookies)

Add into your cookie jar in this order

1 cup wholemeal spelt flour
1 teaspoon baking powder
½ teaspoon vanilla powder
1 cup organic whole oats
¼ cup Naked Chocolat or cacao
½ cup flaked coconut
1 ¼ cups pecan nuts, roughly chopped (you can also use other nuts such as walnuts)
100g good quality 70% dark chocolate, roughly chopped

 

Recipe on how to bake (write on the label)
Add 125 g melted, then cooled butter or olive oil
1 organic egg
3 tablespoons raw honey

method

  1. Pour cookie dough mix into a large mixing bowl.
  2. Add cooled melted butter, egg and honey.
  3. Mix with your hands until ingredients are combined.
  4. Divide into 12 cookies and spread out onto a paper lined baking tray.
  5. Flatten cookies.
  6. Bake for 30 minutes at 160 C.
  7. Cool completely and enjoy.
