WILD CAUGHT SNAPPER WITH WILTED GREENS
This is a glorious recipe featured in my new cookbook, Purely Delicious. A simple and classic recipe that takes just a few moments to prepare. You can use any fish you like for this recipe – some good examples are Australian salmon, flathead, whiting, sea mullet or tailor. I remember when I was about 10 yrs old, my dad would take me fishing most weekends. I had my own hand-line and my own little fishing rod and it was the best family time ever! I also loved to watch mum cook the day’s catch for our dinner from ocean to plate – so fresh. I’ve glazed the fish in Asian aromatics which go perfectly with accompaniments such as my roasted sweet potato.
