Classic Bircher Muesli

This is my signature muesli recipe that I love to enjoy as a healthy breakfast. Scented with orange and vanilla with a hint of pomegranate,  you’ll be in heaven with every mouthful. I often double the recipe and divide into glass jars so I have enough muesli to take to work for a few days. Enjoy. What’s great about it: Oats are a great source of soluble fibre that fills you up, so you feel fuller for longer. According to studies, the beta-glucan fiber found in oats can... Read More

Smashed Berry + Vanilla Jam

One of my favourite things to make this time of year is my purely delicious smashed berry and vanilla jam. I love serving it in so many different ways like spooning over fresh made ricotta and serving with organic sourdough or enjoying a spoonful with lush organic yoghurt and healthy chef protein for a quick milkshake; I even love making a fabulous Christmas trifle with spoonfuls of smashed berry jam,  fresh coconut cream and almond crumble. My recipe takes about 5 minutes to... Read More

Power Porridge

This is my all time favourite porridge that I enjoy most mornings when the weather is a little cold outside. It’s made from vanilla,  flaxseed, chia, fresh apple and a good dose of cinnamon that makes this morning ritual taste exactly like apple strudel.  Adding a little cinnamon has the power to help your body metabolize sugar and reduce insulin levels,  eating as little as 1/2  –  1 teaspoon of cinnamon a day is all you need to feel the benefits. Apple adds... Read More

PRIMAL CLEAN LIVING

My first experience with the Palaeolithic Diet or what’s also known as the  primal or Paleo Diet was about 20 years ago when I started competing in fitness figure competitions. I was working as a chef at the time and needed to lean up and get down to about 16% body fat in order for me to compete for my first competition. My trainer told me to cut out all processed foods (basically anything in a can, jar or packet) as well as grains, which included foods such as bread, pasta,... Read More

The Healthy Chef Shopping List

Here’s a page from my new book called 101 ways to lose weight. It’s my healthy chef shopping list with some great info on how to read food labels and what to look for in the supermarket. My list is intended as a guide and based on my favourite healthy foods I love to eat. Buy seasonal, locally grown fruit and vegetables, as they are nutritionally better for your health and also less expensive. Shop at farmers’ markets, join a fresh food co-op or grow your own. When... Read More

Blueberry + Chia Jam

Here is a quick healthy blueberry jam recipe that won’t spike your blood sugar and  is perfect topped onto oatmeal, spelt and honey scones.  Most traditional jams are made from 1 part fruit to 1 part sugar, then reduced down for about an hour or until thick and syrupy.  My version is basically just fruit, scented with a hint of vanilla, apple, lemon and a touch of honey or stevia. This all goes into a small pot and simmered over a low heat until the moisture starts to... Read More

WARM CHIA PORRIDGE

People often ask me what I eat for breakfast. Well for me that all depends on the weather, how I feel, what’s in season and my activity level for the day.  When it’s cold outside there is nothing better than a bowl of my awesome power porridge made from fresh pear, chia, flaxseed, a little spice and my choice of milk. The fruit varies but my favourite is ripe beurre bosc pear that is naturally sweet, juicy and full of fibre. It also has a smooth, buttery flavour... Read More

Fish In A Bag

This is the perfect meal to make this Easter.  A classic French style en papilotte dish that basically means “cooked in a bag”.  This method allows the food to hold in moisture and flavour as it steams inside it’s little pouch and it’s a clean and healthy way of cooking fish. I’ve cooked this simply by topping the fish with a little olive oil, a hint of sea salt, slice of lemon and a little thyme.  I’ve used blue eye for this recipe, but... Read More

Gluten Free Apple Pie

There is nothing better than a warm slice of apple pie straight from the oven – topped with a dollop of thick yoghurt and a little honey. The pastry is made purely from ground almonds. Almonds also add a lovely flavour and texture to the pie which I really love and give the added bonus of being high in protein, low in cholesterol and a great source of vitamin E that research suggests can slow premature cellular ageing. The apples have been briefly cooked in a little apple... Read More
