Bircher Muesli w/ Pink Lady Apple, Orange, Vanilla + Pomegranate

This is my signature muesli recipe that I love to enjoy as a healthy breakfast. Scented with orange and vanilla with a hint of pomegranate,  you’ll be in heaven with every mouthful. I often double the recipe and divide into glass jars so I have enough muesli to take to work for a few days. Enjoy. What’s great about it: Oats are a great source of soluble fibre that fills you up, so you feel fuller for longer. According to studies, the beta-glucan fiber found in oats can... Read More

Beauty Boosting Vitality Salad w/ Figs + Pomegranate

I always try and enjoy one big salad every day. I use whatever fresh greens are in season at the time and I like to vary the leaf variety to get a combination of flavours that just sing in your mouth when you eat it. For this salad, I’ve used a delicate micro-green salad mix, which are a combination of baby lettuce and herbs that are harvested when they are very young. They add an amazing flavour and marry perfectly with baby spinach, ripe autumn figs and delicate jewels of... Read More

Superfood Muesli

This is such a simple and purely delicious dish that I just had to share it. My superfood muesli with lush summer berries is my favourite breakfast of the moment. It takes just one minute to prepare and what I love about it is that it makes the perfect portable food so you can easily prepare it into a glass jar and take it to work to enjoy at your leisure.  I love to vary my base recipe and use a good organic natural yoghurt, coconut kefir or even a silky cashew cream.... Read More

Healthy Chef Wellness Board

This is my all time favourite Wellness Board.  It’s a dish I make when I’m entertaining with friends for breakfast or lunch or even dinner. I love the elements and textures in this dish and how the vegetables of the moment capture the essence of the season.  At first glance, my Wellness Board may look a little complicated, but if you look closer – it’s really not that hard to create. It’s important to have all your miss en place ready to go before... Read More

Roasted Cauliflower With Lemon Scented Garden Herbs and Pomegranate

Cauliflower was often served at our Polish dinner table when I was growing up. Mum used to steam it then sauté with home made breadcrumbs and browned butter then finish off with a little lemon.  These days I like a fresher touch, and this is one of my favourites this time of year. Lemon, fresh herbs and cauliflower – totally irresistible. This salad makes a simple meal I can whip up in a few minutes when I get home from work and any leftovers can be enjoyed for my lunch... Read More

I love my vegetables, and not a day goes by where I’m not inspired to create purely delicious meals to nourish my body and make me feel great. I couldn’t resist posting my favourite recipe of the moment made from simple roasted baby carrots served on a bed of fresh-made hummus and scented with a hint of pomegranate dressing. You’ll notice that I don’t add the traditional garlic or cumin to my hummus recipe – the reason is that I find it really over powers the wonderful... Read More

Roasted Beetroot Salad with Fig + Smashed Raspberry Dressing

Buckwheat Porridge

There is nothing better than my buckwheat porridge scented with vanilla bean, red apple and cinnamon which makes it taste just like apple strudel. I’ve added chia seed for extra goodness and muscatel adds a mild sweetness that makes it purely delicious. I’ve soaked all the ingredients the night before which makes the porridge quicker to cook the next morning – around 3 – 5 minutes. I vary my topping depending on what fruit and nuts I have in the fridge... Read More
