Gluten free Apple + cinnamon porridge

I love to start the day off with my favorite breakfast of all time….Apple and cinnamon porridge – which tastes just like apple strudel – only it’s healthy Make up a big batch of LSA – as this is your porridge base and store in the fridge for maximum freshness.
Eating a good breakfast is the first step to improving your metabolism, control your weight and getting you on track for eating healthier. Statistics show that people who eat a good breakfast every day are thinner then those who skip breakfast.
What it’s good for:
Apple adds sweetness, high in pectin fibre that helps keep you fuller for longer as well as a mineral called boron that helps strengthen your bones and keep you alert. LSA can help reduce cholesterol and fight diabetes by lowering blood sugar levels because of it’s high fiber and high omega 3 content. A touch of cinnamon can help stabilize blood sugar levels.
Serves 1
Time it takes: 3 minutes
1/2 cup almond milk ( or your choice of preferred milk such as dairy, coconut, soy, rice)
1 apple chopped or grated
2 heaped tablespoons LSA (linseed, sunflower seed and almonds ground up)
pinch cinnamon + a little vanilla
Fresh fruit to serve – optional…I love banana and blueberry
Combine the almond milk, LSA and apple into a small pot. Add vanilla and cinnamon.
Cook porridge over a low heat for a few minutes until heated through and thickened. I sometimes add more fresh fruit like banana.
Serve in a large bowl and top with extra hot milk and some fruit. I like mine with blueberries, banana flaked almonds and extra almond milk and a little honey.

Hi Veronica. LSA is a mixture of linseed, sunflower seed and almond. You can buy in the health food section of your supermarket or health food store – or make it yourself and grind equal quantities of the ingredients. LSA is high in omega 3, protein, vit E to help lower cholesterol, help nourish a healthy GI tract, It’s low GI and gluten free. Can be made into porridge, cakes, cookies, bread and used in smoothies, sprinkled over salads etc…:)

I have this every morning for breakfast now – its so delicious! I finely grate the apple (as i’m slowly saving to buy a vitamix), and use soy milk. This keeps me full till lunchtime – sorry cornflakes, its bye bye for you

Hey Kaye – savoury ricotta recipes – well there is an amazing spinach and ricotta pie on my web site this can also be done as individual tarts. My ricotta stuffed capsicums are wonderful, you can make mini stuffed mushroom pizzas using ricotta which is on my site too. Will keep you in mind when designing recipes.

This recipe looks great, I have fructose malabsorption so I cannot have apples – do you thin another fruit would work as well?
Hi Brittany, make the porridge without apple and substitute with blueberries or strawberries that have a lower fructose content. Oven roasted rhubarb is also delicious with a hint of raspberry and vanilla. Sweeten with a little natvia which is a natural sweetener you can get in your supermarket.

Just purchased a vitamix (very excited).. I’d like to give this a go, as it’s summer will probably do the overnight option you have mentioned on the vitamix video. 2 questions, wondering if I make up a batch how many days will it last. could I at least store in the fridge for 2 nights so I get 2 brekkies? Also when you make your own LSA what’s the shelf life to get the maximum goodness & should I keep it in the fridge? (that’s 3 questions sorry!)

Congratulations Gina – The Vitamix is a fabulous machine. LSA can keep in the fridge for ages. 3 months easily. I make up small batches of LSA and keep in the fridge for 4 weeks. But it’s usually gone by the end of 2 weeks. Keep in a covered container at all times, a glass jar is perfect. If you make up like a bircher muesli style it will keep for 3 days. Add more liquid such as your favourite milk to thin it down. Add grated fresh apple or pear, berries, banana, figs etc etc.. enjoy hot as a porridge or cold like a bircher.

Ive just been introduced to your website and cannont wait to try your recipes. Although I’m insure on this recipe, as it’s a porridge does it not need to include oats as you do not have it in the ingredients list?
